The Morrison's Head Chef

For John it began in Kerry - being given the opportunity to work in a professional kitchen was the starting point before Dublin beckoned to complete his studies at Cathal Brugha - 10 years on you could say he is Dublin savvy,  up on the dining scene and aware of what is new and next.

John has worked in the best of both - hotels and restaurants - a Chef for all seasons who can understand the demands of a hotel while cooking simultaneously for a fabulous destination restaurant. He loves hearty, earthy Irish dishes - they form the base for his dishes along with imagination and fun.

Great kitchens can make great Chefs - and vice versa – The Morrison has both here. John’s food? ‘Refined rustic’ - simple dishes, elegant and homemade - sounds easy but often simplicity is the thing hardest found!
